I once read that depression is the inability to envision the future. I have found this to be true. At times, I have experienced profound darkness during my journey with chronic illness and Lyme Disease. Hope has been my antidote: is the tether between me and my dreams.
One of my dreams is to regularly create nutrient dense bentos like this one.
I am healing, and as I do I move closer to manifesting my dreams. Colorful lunches like this bento ensure that I’m getting a wide range of nutrients. Not only does a meal like this catch the eye, it’s full of real-food fuel for healing and thriving.
Featured in this bento box:
- Pan fried wild shrimp and baby Brussels sprouts
- Stir fried basil
- Easter radishes simmered in bone stock with their greens
- Crunchy raw radish stars
“Hope is important because it can make the present moment less difficult to bear. If we believe that tomorrow will be better, we can bear a hardship today.”
