Celery Sauté With Lemon Garlic Vinaigrette

With its refreshing flavor and toothsome crunch, celery adds a delightful lightness to any meal. Sautéing celery enhances it’s digestibility and primes it for soaking up my bright + bold lemon garlic dressing. The tangy citrus and spicy garlic are perfect for the season’s shift, offering anti-microbial protection as the weather cools. Whether you’re looking for a savory side dish, or a warm salad with a bit of bite on a cloudy day, this deliecious recipe delivers.

_framecelery2-55Serve as a refreshing warm salad or a chilled marinated vegetable dish.

Ingredients: (Serves 2)

  • 2 tablespoons of mild flavored oil such as coconut, avocado, or sunflower oil (sunflower oil is not an AIP ingredient, but one I sometimes use)
  • 10 stalks of trimmed celery
  • 2 tablespoons white wine or coconut vinegar
  • 3 tablespoons fresh lemon juice
  • 1/4 teaspoon sea salt
  • 1 clove of fresh garlic, minced or grated (I use my zester for this)
  • 1/8 teaspoon honey (if strictly ketogenic, you can substitute 1-2 drops stevia extract,  stevia is not an AIP ingredient)

Method:

  1. Cut the celery on the diagonal into slices about 1/4″ thick.
  2. Heat the oil in a large pan over medium heat.
  3. Add the celery slices to the pan and toss to coat with the hot oil.
  4. As the celery cooks prepare the vinaigrette by mixing the remainder of the ingredients in a bowl.
  5. Continue to cook the celery, stirring occasionally until softened and beginning to caramelize around the edges.
  6. Add the celery to the bowl with the vinaigrette and let marinate/cool for at least 10 minutes.
  7. Take a moment to congratulate yourself for taking the time to prepare healing nourishment!
  8. Serve slightly warm or chilled, give thanks, and enjoy!

Note: The longer you marinate the celery the more flavorful it becomes!
