Mixed Seafood Scampi with Asparagus and Shredded Leek Greens

I officially have a Dr’s prescription to nosh on more succulent crustaceans and umami mollusks. Yeah, that’s right. You see, I recently had my labs done which revealed I’m low in Zinc (but otherwise looking good thanks to my nutrient dense diet, huzzah!) To boost my levels of this important immune system mineral, I’ve started some supplementation, and I’ll also be enjoying more zinc-rich foods like shellfish. Doctor’s orders. Oh, I’m loving this.

Something else I love: the rich citrus decadence of a good seafood scampi. Which is why I whipped up this recipe using the buttery goodness of grass-fed ghee (an AIP reintroduction, see recipe notes) and plenty of fresh lemon juice + zest. Thinly shredded leek greens and sliced asparagus spears stand in for pasta, for a fresh flavor that sings of Spring.

A mix of tender cooked calamari, shrimp, and sea scallops makes for a mouth watering meal high in healing minerals. But the best part? Use frozen vegetables and seafood (as I often do) and you’ll have a scrumptious scampi within 15 minutes, making this a great go-to recipe for low energy evenings.

Real nutrition tastes real good. This is great recipe for self romancing or sharing health + love with loved ones.

Ingredients:

  • 1/3 cup ghee (or depending on what your body likes, grass fed butter or olive oil. Note: ghee is not an AIP ingredient so use olive oil if strictly AIP)
  • 2 leeks, the greens thinly sliced into 1/8″ shreds
  • 1 pound asparagus, cut into 2″ pieces (I used frozen + defrosted spears)
  • Juice and zest of one organic lemon + extra lemon slices
  • 1 pound mixed seafood, fresh or defrosted
  • 1/2 teaspoon sea salt, or to taste

Method:

  1. Heat the ghee (or olive oil) in a large skillet or wok over medium heat.
  2. Add the shredded leek greens and stir to coat them in the hot ghee.
  3. Continue to cook the leek greens, stirring occasionally, until softened.
  4. Add the cut asparagus, salt, lemon juice, and most of the lemon zest (set a bit of zest aside to sprinkle before serving) and turn the heat up to medium high.
  5. Cook the asparagus until it’s almost done and then add the seafood.
  6. Cook another 2-3 minutes until the seafood is just cooked and still juicy.
  7. Taste and add more salt if to your liking.
  8. Serve with a sprinkle of zest and additional slices of lemon.
  9. Take a moment to honor yourself, your healing, and this love-infused meal! Enjoy!
