This simple recipe is a wellness stable in our home come cold season. Cleansing lemon, zesty garlic, raw honey & unfiltered olive oil combine to create a creamy & balanced dressing that’s both very versatile & highly healing.
I believe that all real food is medicine, but some ingredients are true medicinal super stars. My Lemon Garlic Dressing harnesses the power of a few of them! It’s powerful antimicrobial action makes it a valuable addition to any infection-fighting protocol.
Every ingredient contains individual antimicrobial properties, but what makes my Lemon Garlic Dressing a medicinal powerhouse is the special, science-backed method of preparation. It’s why this recipe is truly medicine!
Garlic → An antimicrobial superfood. Garlic has long been a part of the medicinal arsenal of people around the world & it’s uses are now being backed by science. Studies have shown that 3 cloves of garlic contains the same anti-bacterial activity as a standard dose of penicillin. Garlic is also proven to be anti-viral & anti-cancer.
The active ingredient of garlic is allicin which is created when two separate substances in garlic, a protein fragment & a heat-sensitive enzyme, come into contact with each other. In order to get these two substances to mingle, garlic needs to be sliced, pressed (or as in this recipe) blended.
The peak amount of allicin is created 10 minutes after garlic is chopped, minced, mashed etc. During that time, keep the garlic away from heat in order to preserve the necessary, heat-sensitive enzyme.
By following the 10 minute rule you’re guaranteed to get the highest medicinal value from each clove!
Lemon juice → Contains important antiseptic & antimicrobial properties. Traditionally used to treats colds, flu, coughs & parasitic infections.
Raw honey → One of the most powerful & versatile antimicrobials on the planet. It is anti-bacterial, anti-viral & anti-fungal. Raw honey also possesses unique properties that stop the formation of bacterial biofilms, which can harbor all sorts of diseases.
Using local honey can help with seasonal allergies unique to your area. Farmers markets and local health food stores are a great places to look for local, raw honey. To make this recipe vegan substitute agave syrup.
Extra Virgin Olive oil → Contains dozens of phenolic compounds that feature impressive anti-microbial properties. Studies have shown that some of the compounds in EVOO have greater antimicrobial activity than commercial disinfectants & can reduce bacterial & viral infections.
If you’ve got a Trader Joe’s in your area, they offer a great organic, unfiltered extra virgin olive oil for only $6. Good quality olive oil isn’t too hard to find, but you can order some HERE if you’d like. For the really good stuff, Bariani’s 100% raw olive oil is pretty much pure magic. Use Bariani’s if you’d like to keep this recipe completely raw.
Salt → I use Redmond’s Real Salt in all my cooking because it contains minerals & trace minerals necessary for good health. Also it’s delicous. I used to buy it in small packs but now I buy it in bulk, which saves me some cash & cuts down on waste.
💚 1/4 cup fresh lemon juice
💚 1/2 cup olive oil
💚 1 teaspoon salt
💚 1 tablespoon raw honey
💚 2 cloves garlicSqueeze the juice from fresh lemons until you have 1/4 cup. CHEF’S TIP: You’ll get more juice from your lemons if you first roll them back and forth while pressing on them first.
There are two ways to catch the seeds while squeezing out lemon juice:
The first is to squeeze them over a mesh strainer placed over your measuring container (my blender doubles as a measuring cup.) The second is how they taught me in culinary school: squeeze the lemon over your cupped hand, letting the juice drain through the cracks in your fingers.
Peeling garlic can be kind of a pain. This method makes it easy: Using the flat side of your knife (or anything else flat, like the bottom of large mug) smash the garlic cloves. Kapow! Take that! Now you can easily peel away their papery skins. Trim off their ends & roughly chop the cloves.
Place all the ingredients in a blender & blend. I use my Vitamix which makes a fully emulsified dressing in 30 seconds. If using a standard blender, blend until the garlic bits are fully blended & everything is nice & creamy.
Wait 10 minutes for the garlic’s antimicrobial power to peak, then blend again briefly if the dressing has separated at all.
✨ That’s it! All done + nicely done!
🔹 My Anti-Microbial Lemon Garlic Dressing will keep in the fridge for week so feel free to double the recipe. We routinely use a whole recipe’s worth in a single day! You can blend or whisk the dressing to re-emulsify it before serving, or simply use it as a vinaigrette.
🔹 By following these instructions, the anti-microbial properties in the garlic will remain potent even if heated, so don’t worry about using the dressing on hot foods or as a condiment while cooking.
🔹 I called this recipe a “dressing” but it’s definitely not just for salads! As I mentioned, you can heat it without diminishing its potency. I actually use it most on cooked greens & roasted vegetables.
