This recipe is: Paleo + AIP (Autoimmune Protocol) + low carb/ketogenic + coconut free
Artichokes are a West Coast favorite and one of the few vegetables my family truly celebrated while I was growing up. Back then we’d always serve them with bowls of hot melted butter and sometimes a squeeze of lemon.
This recipe was inspired by my long term love of these edible thistles and born of my desire to create a dairy free dipping sauce loaded with savory richness. Because lets be honest: melted butter is hard to top!
Blending celery until smooth adds a wonderful creaminess to this olive oil based sauce so it clings to each artichoke leaf for more flavor and less drippy mess. All though, honestly, I’m all for messy foods & finger licking!
Artichokes and tarragon are members of the same family (they’re both composites for all you fellow food nerds) and the addition of tarragon perfectly compliments and accentuates the artichoke’s earthy tones.

💚 2 small lemons
💚 2 cups poultry bone stock (or vegetable broth)
💚 ¼ cup fresh tarragon leaves, equal to 1 full tablespoon finely chopped
💚 1 stalk celery
💚 ½ cup extra virgin olive oil
💚 ¼ teaspoon sea saltTrim the stems of the artichokes so that they are one inch in length.
Cut off one inch of the “petals” from the opposite end of the artichokes.
Zest the lemons and set aside.
Cut four thin slices (about 1/4”) from the middle of one zested lemon, removing any seeds.
Place the lemon slices in the Instant Pot and top each lemon slice with an artichoke, stem-side up.
Pour the bone stock (or veggie broth) into the Instant Pot around the artichokes and set the manual timer for 20 minutes.
While the artichokes are cooking, finely chop fresh tarragon leaves.
Trim both ends of one stalk of celery and chop into small pieces.
Using your knife, cut away the bitter rind of the lemons. Cut the “peeled” lemons into slices in order to easily remove seeds, then finely chop the remaining lemon fruit until slightly pulpy.
Place the lemon zest, tarragon, celery, lemon fruit, olive oil, and salt in a blender or food processor and blend until thick and creamy. Depending on the strength of your blender or food processor this may take a couple of minutes. (A high speed blender like THIS ONE is preferred.)
✨ Serve the artichokes with the dipping sauce and enjoy!
I’ve often heard that healing chronic illness can be compared to peeling an onion, with deeper layers of healing being revealed as you go. But I’ve got a better analogy. I think healing chronic illness is more like eating an artichoke. With every leaf there’s plenty that’s bitter and inedible, but there’s also that little bite of goodness, just like there are always small gifts, insights & opportunities that present themselves at each layer of our healing.
And at the end, after all our hard work, we uncover the artichoke’s heart, the very best part, which we always knew was waiting for us. When we get to the heart, we celebrate by slathering it in rich creamy sauce & savoring it. We’ve been patient & our treat is well earned!
So as you eat your artichoke, consider how healing is like eating an artichoke. Sure, there’s a lot of the rough & tough, but there are also little joys along the way. Pay special attention to the way you never doubt that there’s a delicious heart at the center of your edible thistle.
